Conduct pH/Temperature declines in beef carcases
This two (2) day face-to-face trainer led session is designed to provide operatives with the knowledge and skills to operate pH equipment, to accurately conduct pH/temperature declines, measure ultimate pH and operate the relevant MSA software to record the results.
Meat Science
The MSA meat science course offers industry participants an opportunity to learn about the scientific factors affecting the eating quality of red meat, from production through to consumer with a focus on beef and sheepmeat.
Meat standards Australia grading
This eight (8) day face-to-face trainer led course is designed to provide participants with the practical skills to accurately assess beef carcases to Meat Standards Australia requirements. Must have completed AUS-MEAT Chiller assessment prior to do this course.
MSA - Independent Boning Rooms
The aim of this course is to provide boning room and loadout operatives with the knowledge and skills to maintain identification and integrity of MSA product.
MSA Beef Eating Quality Training
These face-to-face trainers led sessions are designed to provide participants with the knowledge and skills to maintain and improve beef eating quality at your enterprise ultimately meeting the processor and MSA eating quality standards.
MSA Sheepmeat Eating Quality Training
These face-to-face trainers led sessions are designed to provide participants with the knowledge and skills to maintain and improve sheepmeat eating quality at your enterprise ultimately meeting the processor and MSA eating quality standards.
MSA Slaughter Floor Grading
This five (5) day face-to-face trainer led course is designed to accredit participants to accurately assess beef carcases on the slaughter floor.
